plate of Southwest Fried PotatoesI love potatoes! So adding just about anything to them can really make a difference from the plain fried potatoes. These spicy fried potatoes go great with scrambled eggs, or they're just a nice meal all by themselves. You can add more or less of everything too.

Prep Time: 10 min

Cook Time: 20 min

Total Time: 30 min max

Yield: 1-2

Ingredients:

  • 1-3 partly cooked potatoes
  • 1/4-1/2 onion
  • 1-2 tomatoes
  • 1 small handful cilantro
  • 1-3 tsp hot pepper flakes
  • 2 Tbsp butter or oil
  • 1/8-1/2 tsp powdered garlic or 1-2 cloves sliced

Steps:

  1. Chunky cut your semi-cooked potatoes. Chop up the cilantro. Quarter cut the tomato(s). Thick slice the onions.
  2. In a cast iron skillet, heat up your oil or butter and add your chunked potato pieces and onion slices.

  4. Now add your red pepper flakes, salt and garlic. Fresh garlic slices are the best, (I was out) so I used garlic powder which is okay too.

  6. When your potatoes and onions are cooked, put in your tomato quarters and cook those. Add the cilantro last and flip that around for a minute. It's done.

Let raw potatoes stand in cold water for at least a half-hour before frying in order to improve the crispness of French-fried potatoes. Dry potatoes thoroughly before adding to oil. By Peggy

Wash the potatoes before you peel, removing any scarred or spoiled spots, eyes, sprouts, & the like. Then peel the potatoes and save the skins for frying.

Frying them in a little oil for about a minute will give you the same munchy tidbits that bars & restaurants charge high prices for.
