Vegetable Beef Soup Recipes

A bowl filled with vegetable beef soup.

Ingredients:

  • 1-2 lb. stew beef browned
  • 3-4 garlic cloves
  • 1 large onion, chopped
  • 2-3 Tbsp. olive oil
  • 1 cup water
  • 1 or 2 lbs. fresh carrots

  • 1/3 - 1/2 jar of beef base to 1 gal. water
  • 4-6 large potatoes, diced bite size
  • 1-2 large onions, large chopped pieces
  • 3 cans diced or stewed tomatoes with juice
  • 1 or 2 cans beans - I used kidney beans, and Pork and Beans
  • 1 or 2 cans cut corn
  • 2-3 stalks celery, diced
  • 2 cans green beans
  • 2 cans peas
  • 2 - 3 tsp. parsley

Directions:

Brown stew beef in large skillet with onion, garlic, and olive oil. After meat is really browned, add 1 cup water to loosen the meat drippings. Add that to the soup pot.

Peel and slice 1 or 2 lbs. fresh carrots and steam them in another small pot.

When the beef is almost tender, add remaining vegetables and parsley. Add beef base water and 2 cans beef broth (or you can use chicken broth). Simmer.

When meat is tender, add the steamed carrots. Salt and pepper to taste.

(You can add instant potatoes if you like a thicker soup.)

This is an easy vegetable soup. Add anything you like in the way of canned or frozen vegetables. I hope you'll enjoy this. Don't be afraid to improve on it with your own favorite flavors. Please share some with someone that can use a hug and warm meal.

Using a crock pot, cook a chuck roast in your usual way, separate the meat and liquids into portions for soup starters and freeze. I freeze mine into 4 portions but it depends on how much meat you like in your soup.

FIESTA SOUP

1 lb. ground beef
2 cans Campbell's condensed minestrone soup (including 2 soup cans water)
1 can Ranch Style bens
1 can diced Rotel

1 lb. Velvetta cheese - cut into small cubes

Brown ground beef and crumble into small pieces --drain and add next three ingredients.
Bring to a boil and then add cheese gradually, stirring constantly.

Serves 4 - 6.

Is better if made day before serving except for adding cheese so it will not burn.

This is a nice hearty soup especially for cold nights! Can be served over a side of rice or French bread. Requires little prep time and cooks easily in an instant pot.
