Hamburger Soup in Green BowlThis is a great, hearty soup that is not super expensive to make an contains ingredients that most of us keep in our kitchen most of the time. Very easy and good!

Ingredients:

  • 1 lb. lean ground beef
  • 2 cups tomato juice
  • 1 cup diced potatoes
  • 1 cup diced celery
  • 1/2 cup diced onion or 1 Tbsp. instant minced onion
  • 1 Tbsp. green pepper, chopped (optional)
  • 1/4 cup uncooked rice
  • 5 cups water
  • salt and pepper, to taste
  • 1/2 tsp. garlic salt
  • 1/2 tsp. seasoning salt
  • 1 Tbsp. Worcestershire sauce

Directions:

Brown lightly the ground beef; drain off fat. Add rest of ingredients and simmer 1 hour. Add more liquid if needed.

You can exchange any of the vegetables in this recipe for almost any other type of vegetable you want for a different flavor.

Prep Time: 15-20 Minutes
Cooking Time: 1 Hour 15 Minutes

Saute' ground beef and onion in saucepan, stirring until crumbly; drain. Add tomatoes; mash. Add consomme', soup and vegetable juice cocktail. Add vegetables, rice, salt and pepper.

Brown meat slightly in butter. Cover with water, add bouillon cubes, vegetables and herbs as desired. Cook slowly for 1 1/2 hours or heat in crockpot for 8-10 hours.

Hi. I don't have a real recipe - I cook the old fashioned way, adding things and cooking it until it "looks right", just a way of saying cooking to suit myself and my family. So no measurements here, just a guideline. I make it the way I make stuffed cabbage, without stuffing anything. Brown some onions and a little garlic. Add ground meat and brown. Pour in a can or two of tomatoes, chopped, and the juice.

I usually season it with paprika, maybe some cumin and coriander too. Chop a small cabbage and put it in. Bring to a boil, reduce to a simmer, and cook until the cabbage is done. Then add cooked rice (rice sometimes does not cook well in a tomato broth). Sometimes I add in sliced carrots, kidney beans, and corn along with the cabbage, and I will vary the seasonings too. Hope this helps!
