For Garlic and Parmesan lovers everywhere ;-)
Preheat oven to 425 degrees F.
Place the potatoes in a large bowl, drizzle with olive oil; add the garlic, seasoning salt, 1/2 cup of the Parmesan and toss until evenly coated. Remove the potato strips from the bowl and spread onto a nonstick baking sheet in a single layer. Set the olive oil mixture aside.
Bake 30 minutes, turning once. Sprinkle the potatoes with remaining 1/4 cup of Parmesan cheese and slightly drizzle with a bit more of the remaining stirred olive oil mixture. Return to the oven and bake until the sprinkled Parmesan cheese melts, about 10 minutes.
