Guacamole Deviled EggsThis is hands down my favourite twist on deviled eggs. Instead of adding mayonnaise and vinegar, I add avocados and lime juice. Every bite is just so creamy and dreamy. Not to mention I love the green colour! If you'd like to make yours spicy, add half a minced seeded jalapeno.

Total Time: 15 minutes

Yield: 8 egg halves

Ingredients:

  • 4 hard boiled eggs
  • 1 ripe avocado
  • 2 tsp lime juice
  • 1 Tbsp yogurt (or sour cream)
  • 1 Tbsp chopped cilantro
  • 1 tsp garlic powder
  • salt to taste

Steps:

  1. Peel the hard boiled eggs and halve them lengthwise.
  2. Eggs cut in half
     
  3. Scoop out the flesh of the avocado and mash in a bowl. Scoop out the yolks from the halved eggs and add to the avocado. Mash them together until smooth. Add the rest of the ingredients and mix well.
  4. Egg yolks and smashed avocado
     
  5. Fill a piping bag or sturdy plastic bag with the mixture.

  7. Snip off the end of the plastic bag (if you're not using a piping bag and tip) and fill the egg white halves with the mixture. Garnish with chopped cilantro, if desired.

I originally developed this recipe for a Cinco de Mayo's BBQ for last year, and have had friends ask for the recipe. It's yummy, and I hope you enjoy these eggs as we do.

I thank my friend, Aric, for this recipe! You can also switch up this recipe using albacore tuna and Greek yogurt (not fat free) in place of the sour cream, if you wish.

To make easy deviled eggs, put the cooked egg yolk in a zip lock bag. Then mash until they are all broken up. Add the remainder of the ingredients, reseal, and keep mashing until it is thoroughly mixed.

Cut the tip off of the baggy and squeeze the mixture into the eggs.

Cut tops off of hard-cooked eggs about 1/3 from the top. Gently scoop out yolks with a small spoon. Cut a small thin slice off the rounded bottoms so eggs will sit flat. Set aside tops for another use.

Boil 6 eggs to hard-boiled stage. Cool completely, peel and slice in half. Mash egg yolk and add above ingredients. Fill egg white cups.

Split eggs and remove yellow yolks. Put in small mixing bowl. Add sugar, salad dressing, vinegar and mix in bacon bits. Put mixture in small Ziplock bag.
