Pickled BeetsI love these so much! My mom had these around the house all the time when I was growing up! Yum! Love the tangy taste!

Ingredients:

  • 5-6 lb. beets (depending on size)

  • 1 cup beet juice
  • 1 cup sugar
  • 1 cup vinegar
  • spices to taste, using stick cinnamon

Directions:

Simmer beet juice, sugar, vinegar, and spices. Add beets; boil gently a few minutes. It seems the longer these set, the better they taste.

Servings: varies
Prep Time: 5-10 Minutes
Cooking Time: 5 Minutes
