Homemade potato chips in a bowl.I love Kettle brand baked potato chips as a treat and I also love jalapeno flavored chips, but Kettle brand doesn't have the baked chips flavored with jalapeno. I want to thank Des at Life's Ambrosia for the idea that you can flavor chips on your own! You can find my Cilantro Sour Cream recipe for dipping by doing a recipe search here at ThriftyFun. :-)

Ingredients:

Directions:

Saute jalapeno in olive oil over medium heat in a small skillet until jalapeno is slightly softened, add lime juice and saute for about 10 to 20 seconds longer.

Place chips in a large bowl, evenly pour jalapeno mixture over the top, toss well to coat and serve.

Before you slice the potatoes into thin slices, scrub them well, but don't peel them. The peel gives them a different taste and texture than the store bought chips. They are so much tastier!

Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat. Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.

Due to health issues, I cannot eat fried foods. I would love a simple recipe for baked potato chips the thinner, the better. I have attempted this before, but didn't have much luck. I've also tried the microwavable method using a stand where you place a thin slice of potato in each slot, but they didn't turn out well. Thanks in advance for any ideas.

I don't have a recipe for baked potato chips. I do have one for baked French fries. Cut 3 or 4 potatoes into strips. Put them in a bowl and add a tablespoon of oil and toss.

Put these onto a cookie sheet or two and bake in a 475 degree oven until done to the crispness you prefer. Then salt.

For a thinner chip I use my potato slicer; the old kind where if your not careful you slice your finger. But as far as baking, I don't know, sorry.

Bed bath and beyond has microwave potato chip "fryer"that is sensational and it is only 6.95. It sounds crazy when you read the directions, but it includes the slicer and the microwave rack. These potato chips are excellent and crispy and no fat!

I learned to cook them longer than they said on the instructions till they start to brown, but I bought 7 more for stocking stuffers for Christmas for all the ladies in the family!

I don't know how to much make baked chips either. But if you have an Aldi's grocery store in your area, they have baked chips that are tasty and only cost about $1.29 or at any rate, less than $2 a bag.

Hi Debbie,
I just saw this, as I am catching up with un-read email. I have a recipe that I copied recently from the website of All You magazine, which I'm pasting below. I haven't tried it yet, but it seems simple to do. Good Luck.

I love homemade chips. What I do after I peel my potatoes is use the peeler to slice the chips. Just be careful towards the end not to slice you fingers. Then I rinse the slices until the water is clear, getting as much starch off as I can. I do drain the wet chips after rinsing on towels.
Then I use my daddy fryer. Doesn't take a lot at a time, but if you watch they will stop sizzling when cooked. You can leave them in longer, if you like them darker. Then drain on paper towel and salt.

Preheat oven to 400 degrees F. Cut potatoes, in crinkle cut fashion, if desired, into 1/4 inch thick pieces. Place in large bowl. Add oil; mix lightly. Add dressing mix; toss to coat evenly.

Homemade chips are easy to make. Slice potatoes very thinly, and drop into hot oil. Don't fry to quickly or they'll burn. Do NOT add salt while frying, or the will never crisp properly.
