Homemade Energy Bars

A bowl of bite sized energy bars.This recipe was shared on Facebook by a friend. I left off 2 ingredients. It calls for 1/2 cup ground flax seed and 1 Tbsp. chia seed which I probably should not have because I am on blood thinner. I didn't add anything else to the recipe in place of these 2 items and they came out really good. They are even better when they have been in the refrigerator for several days but you need to put them out of sight as they will get gone fast.

Cook Time: no baking

Yield: 25 one-inch balls

Ingredients:

  • 1 cup oatmeal (I used old fashioned)
  • 2/3 cup coconut flakes
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup semi-sweet mini chocolate morsels
  • 1 tsp vanilla
Ingredients for No Bake Energy Bites
 

Steps:

  1. Mix oatmeal, coconut flakes and chocolate chips together in a medium mixing bowl.
  2. Mixing together the ingredients.
     
  3. Mix peanut butter, honey and vanilla together in a small bowl until smooth.
  4. A bowl of smooth peanut butter.
     
  5. Add to the oatmeal mixture and stir until well mixed.
  6. Mixing the peanut butter into the dry ingredients.

  7. Set in refrigerator for an hour.
  8. Roll into 1 inch balls.
  9. A plate of bite size energy balls.
     
  10. Store in an airtight container in the refrigerator. Best to hide them so they will last longer.

Before I cut into bars it appears they may crumble. Used 6 tablespoons of agave, I don't want more sugar. How about peanut butter? Any suggestions? Thanks.
