Does anyone by chance have a recipe for salmon that tastes like the ones Longhorn Steakhouse uses? I do know that its got bourbon in the marinade. I don't know if the marinade is used as a baste while cooking it or if it sits in it before cooking it.

LONGHORN STEAKHOUSE SALMON MARINADE

Equal parts of:
Brown sugar
Soy sauce
Bourbon

Marinate salmon overnight, turning once.

Lone Star Steakhouse & Saloon Sweet Bourbon Salmon
Sweet Bourbon Marinade:
1/4 cup pineapple juice
2 Tlb. soysauce
2 Tlb. brown sugar
1 tsp. Kentucky Bourbon

1/4 tsp cracked blk pepper
1/8 tsp garlic powder
1/2 cup veg. oil
2-8oz. salmon fillets
2 tsp snipped chives

1. Combine juice, soysauce, br. sugar, bourbon, pepper and garlic in med. bowl. Stir to dissolve and add the oil
2. Remove skin from fish. Place the fish in a shallow dish and pour the bourbon marinade over them saving a little to brush on the fish as it cooks. (I use a ziplock bag to marinate my fish) ref for at least an hour up to 3.
3. Preheat your grill
4. Cook fish for 5-7 mins per side and regularly brush fish with the marinade.
5. arrange fish and sprinkle with chives.

I buy whole pineapple in a can and use the juice. When I'm grilling the fish I will grill the whole pineapple slices at the same time as a topping for my salmon.
I've also on occasion wrapped my Salmon with Bacon and than grilled.

I have been looking for this recipe ever since I ordered the salmon for lunch last week, it was awesome. The kitchen mgr gave me the recipe, but left out the pineapple juice and the quantities of the ingredients.

The salmon is marinaded in knob creek burbon, brown sugar and soy sauce. Once put on the flattop grill (425 degree) The salmon is brushed with the marinade several times to add flavor. To keep the salmon moist, the skin is left on one side until it is almost done.

I worked for Longhorn for 8 years, and I never heard of the pineapple juice, although it may be. The trick is to marinate overnight, and add bourbon. Also, Jack, not Knob Creek

I currently work at Longhorn as a prep cook. It uses 10 high bourbon and no pineapple juice what so ever. Canola oil, powdered garlic, ground pepper, regular Morton salt, Brown sugar and soy sauce.

Made it yesterday. Make sure you shake it or stir it well before using and we marinate our salmon for at least 12 hours before using.

I love salmon from Longhorn - they do have the best - But I do not believe it had pineapple juice in it at all - but sounds like it would be good too.

I am sick, with no energy. Can anyone suggest a simple, tasty recipe for Salmon Fillets and Chicken breast (skinless and boneless). I am cooking for one, which tends to get very boring anyway. Thanks all!

I put 2 small potatoes in the oven to bake for the 2 of us. When they're about 25 minutes from done I add a salmon filet and just bake for 25 minutes. I put it on a rack in a dish and sprinkle with seasoned salt. While that's cooking I chop a salad. SUPER easy dinner and one of our favorites.

For chilcken check out the Campbell's soup web site. There are many recipes there for one pan chicken dishes that are very easy and fast. Please don't get in to the toast and tea dinners that so many single people do! You'll STAY tired if you don't eat right.

I like to use sweet and sour sauce that you buy in a jar. I place either the chicken or salmon in a baking dish and pour the sauce over it and bake uncovered until done. I serve this with rice or noodles and its great.

I use prepared salad dressing to baste my chicken and fish. PC Blue label makes a sesame vinigrette dressing that is particularly tasty. Just baste the fish or chicken with Italian, Ranch or other favourite salad dressing and bake until done, turning once and basting the other side. At 350*F, the chicken takes about 30-40 minutes and the fish about 10 minutes a side.

Poaching in a water/lemon juice mixture with Mrs Dash Herb and lemon is tasty too, especially for fish. I put a salmon fillet or chicken breast in a PC Blue Menu Hot Dog First bun, add chopped lettuce and tomato and chow down. PC is Presidents Choice and they make some really good basting sauces too.

Quick & Easy Poached Salmon
Serving: 1
Prep & Cook: 5 min.

Ingredients:
Salmon steak or fillet; chicken tenders or chicken breast (fresh or thawed)
1 tbs. butter
1 clove garlic or
1 tsp. garlic spread/butter to taste
1-2 tbs. water (omit liquid if you do not want to poach - you will get a light sauté instead.)
Note: Frozen product will have additional water in it.

Add if desired:
Shallots or onion thinly sliced
Wine

Directions:
Heat butter, garlic, and water In sauté pan or shallow fry pan until mixed. Do not burn.

Place salmon in the mixture and poach on medium low with lid on.
Turn the salmon after 2 minutes, and poach other side. Do not overcook.
Salmon: You can pierce the center and pull apart to see if it is done to your taste. If it is dark pink or red, it is not fully cooked.

Chicken tenders or chicken breast: Poach until center is white; an additional minute or two.
Remove from pan and place on plate.

Garnish with parsley, lemon, dill, or your favorite sauces.
Serve with rice or pasta. (You can find packaged & precooked at the grocery)

Add a vegetable, salad or fruit to round out the meal. (Raw or slightly steamed is fast)

I put 1 chicken breast in a baggie and add bottled marinade then seal & freeze. On busy days I put one in the fridge to thaw. When I get home from work I throw it on my little George Foreman grill, put a roll on top to warm, add a salad & voila! I also like Italian dressing as a marinade.

If you take your skinless boneless chicken breast, marinade it with maybe a honey teriyaki marinade or whatever flavor you enjoy, (the bottled kind), wrap the chicken with a strip of bacon (poke with a toothpick to hold the bacon on) and grill it, it's DELICIOUS! Hope you feel better soon!

Hi! I hope you are feeling better soon! I know you asked for salmon fillets, but here's one that's really easy for you.

1 CAN OF SALMON.
Flour
1Egg
Salt & Pepper to taste

Drain canned salmon.
Remove bones, and flake.
In seperate bowl, scramble the egg, then pour onto the salmon. Add a small amount of the flour and salt & pepper.
Mix well with fork.
Heat Canola oil in skillet.
Take and scoop salmon, small amounts, into a tablespoon and drop into skillet and lightly fry.
Draine well on paper towels and enjoy.

This was a quicky and if you can digest a little of the Canola oil it is delish!!

A simple way to cook salmon is to place it on a piece of foil, add some lemon juice, butter and whatever seasoning you like and wrap into a package. Cook in a 350 degree oven for about l5 minutes. I cook mine in a toaster oven and it's delicious. Hope you soon feel better.

I like to use the microwave. I take a piece of plastic wrap, place my salmon on it with some thin sliced onion, dill and a slice of lemon. Then I add two slices of butter, wrap it up, place it on a plate and microwave on high for 4-5 minutes depending on the size of the fillet. I've also done this using just dry herbs such as Mrs. Dash herb season or Lemon Pepper and butter. It's fast and there is almost no mess

I am looking for a recipe for Onion Crusted Salmon for a friend. She used to get it at Leverlocks restaurant in Florida, which has gone out of business.

Perhaps you could crush the onion rings in a can, coat the salmon with something like mayo and roll in the crushed onion rings and then bake. Have never had onion crusted salmon, but this might be worth a try.

I used to eat Leverocks' onion-crusted salmon all the time until I moved away from Tampa. Sad to hear they're gone.

Anyway, I cook a real simple version of it at home - I get a can of french fried onions from the supermarket, put the salmon skin-side-down in a pan on the stove, layer the top with the french fried onions, and cook uncovered on low heat until the salmon is done. You can use oil or melted butter to "stick" the onions to the salmon if you prefer, but it's not necesssary. The salmon skin should come off easily after cooking. Almost as good as Leverocks!

Onion Crusted Salmon

1/2 can of fried onions
2 center cut salmon filets (washed)
2 tbs. lemon

Pre-heat over to 350

Take 1/2 c. of onions and put in zipped lock bag and using a rolling pin..crush into onion bread crumbs. Lay salmon on rack in roasting pan take onion mixture and pat on top of salmon. Drizzle each piece with lemon and bake uncovered at 350 for 20 minutes. This comes out so great your family will ask you for more

I wonder which Leverock's closed. We often eat in one and have the onion crusted salmon. Leverock's is located on Placida Road (775) in Englewood, FL.

Perhaps there are 2 Leverocks, now. We eat at one, regularly. 90% of the time, I order the Onion Crusted Salmon (my favorite).
