This is a quick meal to whip up for lunch or dinner. I used frozen scallops making this even easier to make. I did soak the scallops in room temperature water for 5 minutes prior. Once cooked the scallop sauce pairs well with the rice!

I like to put about half a stick of butter in a pie pan. Add the scallops & kind of roll them around in the butter.

Our favorite and only way is to cook them on the grill. This only applies to the larger sea scallops. Seasoning is not necessary. They caramelize from their natural sweetness. Just be careful not to overcook.

Cook pasta in a large pot of boiling salted water until tender but firm, 10 to 15 minutes. Drain and rinse under cold water until cooled.
Mix together butter, bread crumbs, garlic, minced onion, parsley, water, lemon juice and salt and pepper to taste. Form into roll and wrap in waxed paper. Chill garlic butter until firm, at least 1 hour.
