In large saucepan cook onion in the butter using medium heat. Stir occasionally. Cook until tender, about 8 minutes. Stir the flour, garlic salt, and pepper into the cooked onion. Add milk all at once. Cook and stir until mixture thickens and is bubbly. Add 1/2 cup of cheese stirring until cheese has melted. Remove from heat. Place half of the sliced potatoes in a greased 1 1/2 quart casserole. Cover with half of the sauce. Repeat layers.
Bake covered in 350 degree F. oven for 35 minutes. Uncover casserole and bake 40 -45 minutes longer or until potatoes are tender.
Sprinkle with 1/4 cup cheese. Let stand for 5 minutes. Makes 4 servings.
