Saute onion with ground meat. Drain off the fat. Open all the cans and empty the entire content into the pot. Bring to a boil, reduce heat, and simmer 30 minutes.
Serve with cheddar cheese. sour cream, tortilla chips, and/or crackers.

Years ago I used to make a taco soup that contained hamburger, taco seasoning, tomatoes, and Velveeta. I can't remember the rest of the ingredients, or the directions. I do know it contained "no" Ranch dressing. I can't stand Ranch dressing! All of the recipes I have found on-line contain Ranch dressing. If anyone has the recipe or something similar I would appreciate it. Thanks.

Paula Deen has an excellent Taco Soup recipe you can try and just ditch the ranch dressing mix if you must. Personally, I think you should try using the dressing mix because the soup is not going to taste like ranch dressing at all because of the other ingredients in the recipe and the ranch dressing packet is used for the herbs and spices it contains as a flavor enhancement for the soup (like parsley, onion powder, garlic powder, thyme, dill weed, etc).

Here is one that I got off the internet but don't know where.
1 large can refried beans
1 can black beans, drained
1 can rotell tomatoes
1 small can green chilies
1 small onion, diced
1 clove garlic minced
1 Tablespoon lime juice
4 cups chicken broth
1 small can of corn
spices to taste
Garnish with sour cream, grated cheddar chees, chips and black olives. You can add either cooked beef or chicken.
I have a great soup that is similar but made with chicken:
2 chicken skinless (deboned) breast (you can use leftover chicken 2 cups shredded)
2 tsp extra virgin olive oil
This recipe sounds close to what you are looking for. If you don't want the canned corn in it, you can substitute a can of beans.
Taco Soup
1 lb. ground beef
2 cans RoTel tomatoes
1 15 oz can diced tomatoes
1 can beans of your choice -undrained (pinto, kidney, etc.)
1 can whole kernel corn - undrained
1 pkg of Taco Seasoning
8 oz. cubed Velveeta cheese
Brown the ground beef, drain. Stir in remaining ingredients, except cheese. Simmer until hot. Stir in the cheese until melted.
I never knew Ranch Dressing was a normal ingredient in Taco Soup. Here's the recipe I've been using. Hope you enjoy it.
Slow Cooker Taco Soup

1 pound ground beef
1 onion, chopped
1 green pepper, chopped
taco seasoning
1 can diced tomatoes
garlic powder
parsley
salt and pepper
Brown hamburg with onions and peppers. Drain well and add taco seasoning. Put in slow cooker.
Combine remaining ingredients in crock pot. Cook on low for 4.5 hours.
Serve with crushed taco chips and shredded cheese on top.

I think it's:
1 lb lean ground beef (or any other lean meat)
3 cans beans (any variety)
3 cans petite cut tomatoes (garlic and jalapenio is good but too spicey for some folks)
1 can corn
1 pkg taco seasoning
1 pkg hiddenvalley ranch seasoning
brown meat, drain off any fat.
Do not drain beans or corn. Their liquid forms the soup stock.

Brown ground beef, drain and rinse. Put the ground beef into a large pot. Add the Taco Seasoning, drained beans, canned tomatoes and the can of soup.
Combine all in large slow cooker and stir. If you like it hot add 1 chopped jalapeno pepper. Cover and cook on low for 4 hours.
