Living in Kentucky the markets are flooded a few times a year with bananas. My husband seems to go crazy and buys up half the store when he goes shopping alone. I have bananas coming out my ears. There are only so many bananas that you can eat before you just cant eat another one. Furthermore, during the summer the bananas get ripe, so quickly, I have no idea what to do. I've made banana fudge, banana jam, banana cakes, banana bread, frozen bananas and banana cookies.
It is wonderful to make cookies if it is in the middle of winter and not summer. The heat from outside and the oven blasting makes you feel like you're living in a sweat house instead of your home. I made up a batch of banana cookie dough, and didn't feel like standing in front of the oven for hours to make the cookies. So instead I made these delicious banana bars.

In a mixing bowl, cream 1/2 cup butter and 2 cups sugar. Beat in eggs, bananas, and 1 tsp. vanilla.
Mix all together the ingredients. Do not use mixer or beater. Stir very well. Will fit one 11x18 or 9x12 inch pan.
Cream margarine and sugar. Add remaining ingredients, except bananas and mix well.
