baked banana uncut barsLiving in Kentucky the markets are flooded a few times a year with bananas. My husband seems to go crazy and buys up half the store when he goes shopping alone. I have bananas coming out my ears. There are only so many bananas that you can eat before you just cant eat another one. Furthermore, during the summer the bananas get ripe, so quickly, I have no idea what to do. I've made banana fudge, banana jam, banana cakes, banana bread, frozen bananas and banana cookies.

It is wonderful to make cookies if it is in the middle of winter and not summer. The heat from outside and the oven blasting makes you feel like you're living in a sweat house instead of your home. I made up a batch of banana cookie dough, and didn't feel like standing in front of the oven for hours to make the cookies. So instead I made these delicious banana bars.

Prep Time: 30-40 Minutes

Cook Time: 35-45 Minutes

Total Time: 1 Hour

Yield: 16 Bars

Ingredients:

  • 1/2 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cup bananas, mashed
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 cups flour
  • dash of salt

Steps:

  1. Preheat oven to 350F. Peel your over ripe bananas and put them in a mixing bowl.

  3. Use your potato masher to mash the bananas. You don't need to cream them; you want to leave a few chunks in them for flavor.

  5. In your mixing bowl add the bananas, butter, eggs, and vanilla. Cream together until smooth.

  7. Add your dry ingredients. Mix well until you've incorporated all the ingredients into the creamed banana mixture.

  9. Take a round cake pan and grease the sides and bottom of the pan. You can use a square if you dont want to use the round pan. This makes the bars square and not like slices of a cake.

  11. Flour the pan on the bottom and the side.

  13. Pour the batter in the pan and put this in the oven. Bake for 30 to 40 minutes until the center of the batter is cooked. You can test the center with a toothpick. Once it comes out clean without any batter on the toothpick the bars are finished.
