Spanish Quiche in pie panI love creating new ways to make quiche. This one came out exceptionally well! You can make it as spicy as you want.

Ingredients:

  • 8 eggs
  • 1 cup half n half
  • 1 cup cooked crumbled bacon
  • 2 Tbsp chopped scallions
  • 1/2 tsp dried basil
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 pkg (8oz) shredded cheddar cheese
  • 1 pkg (8oz) crumbled feta cheese
  • 1 can (14oz) diced tomatoes, drained
  • few drops of Frank's Red Hot or tabasco sauce
  • 1 pre-made pie crusts

Steps:

  1. Preheat oven 375 F. Spray oil glass quiche dish.
  2. Roll out the pie crust and place in dish, forming a crinkled edging.

  4. Place all the bacon evenly on the bottom of the crust and chopped scallions.
  5. In a bowl mix eggs, half n half, and seasonings. Beat well.
  6. Layer the feta cheese next over the bacon and then the cheddar cheese.

  8. Then pour egg mixture over the top. Carefully put the dish on a cookie sheet and place the dish in the center of the oven. For about 45 minutes, test by checking for done by the center.

Heat oven to 350 degrees. Combine milk, eggs and seasonings; mix well. Toss cheese with flour; add cheese mixture and bacon to egg mixture.

Preheat oven to 450 degrees F. Bake pastry shell 7 minutes or until lightly browned. Reduce oven temperature to 325 degrees F. Reserve 2 Tbsp. bacon.

Combine all ingredients. Pour into unbaked pie shell. Bake 10 minutes at 450 degrees F. Lower heat to 350 degrees F for 30 minutes more.

Line unpricked pastry shell with a double thickness of heavy duty foil. Bake at 450 degrees F for 8 minutes.

Remove foil, bake 5 minutes longer. Cool on a wire rack. Reduce heat to 350 degrees F.

Roll out 1 cup Ritz crackers. Saute' onions in butter and add to cracker crumbs. Pat in 9 inch pie tin. Mix milk, eggs, salt and pepper. Pour into prepared pan.

Heat oven to 375 degrees F. In a large skillet, brown sausage, onion and green pepper; drain well. Combine eggs, cheese and sausage mixture. Separate biscuit dough into 10 biscuits.

Bake pie shell at 425 degrees F for 10 minutes. Cool. Saute' onion in margarine. Separate 1 egg and brush egg white on pastry shell. Pour excess white into large bowl, add yolk, remaining 2 eggs, milk, flour, salt and pepper.
