This is a great way to use up milk. I made it chocolate by adding 3 Tbsp. cocoa powder to the sugar/cornstarch/egg mixture. I like this recipe because it doesn't have a lot of sugar in it. I topped mine with shredded coconut.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 4-6

Ingredients:

• 1/3 cup sugar
• 2 Tbsp cornstarch
• 1/8 tsp salt
• 3 Tbsp cocoa, optional
• 2 eggs, beaten
• 2 cups milk
• 2 Tbsp butter or margarine
• 2 tsp vanilla

 

Steps:

1. Mix the sugar, cornstarch, cocoa powder (if using)and salt in a saucepan.
2. Add the eggs to the sugar mixture and slowly stir in milk until combined. I found that a whisk is the best way to combine the ingredients.

 
3. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute.

4. Remove from heat. Stir in the butter and vanilla.

 
5. Let it cool off around a half an hour.
6. Chill in the refrigerator until ready to serve.
