A simple meal to whip up and a much healthier alternative than the take out version.

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Yield: 2-3 people
Ingredients:
2 stems scallions
3 cloves garlic
1/2 lime
2 cups broccoli
3 Tbsp peanut butter
soy sauce
2 tsp sugar
rice
olive oil
salt
pepper
Steps:
Wash all your ingredients and prep. Chop broccoli into smaller pieces (or your desired size. Mince garlic, chop scallions, zest 1/2 lime, and make rice.
Preheat toaster oven to 400 degrees F bake. Line oven tray with foil. Put broccoli on tray. Drizzle some olive oil, and a dash of salt and pepper. Bake for about 15-20 minutes, or until ready.
You can purchase beef and cut into strips, or purchase the beef stir fry (already cut and ready to marinate out of the package). In a bowl, I marinated the beef with lime zest, dash of salt and pepper, some minced garlic and splash of soy sauce. Set aside for about 15 minutes.

While the beef is marinating, you can make the peanut sauce which is optional (but it will be to drizzle over the meat to add some additional flavor). Add to a pan on low heat, minced garlic and scallions. Then, add creamy peanut butter, sugar and splash of soy sauce. Add 1/3 cup of water and stir until you get a sauce consistency. Set aside to cool.
In a wok over medium high heat, drizzle some olive oil and stir fry beef for about 4 minutes until browned, or well down (up to you). Toss in scallions to top off.

Broccoli and rice should be done. Scoop rice and top off with roasted broccoli and stir fry beef. Drizzle with peanut sauce.
Ground beef and tofu in a spicy ginger sauce is delicious whether you are recovering from a cold or just looking for a scrumptious meal. Serve over rice if desired. The complete recipe and ingredients list follows.
My garden is cranking out produce, and I also had some things in my refrigerator to use up. This tasted pretty good! Feel free to use other seasonings and to double or triple the recipe.

Cut beef into strips. Combine water, cornstarch, sugar, lemon juice, soy sauce, salt and bouillon cube in bowl, mix well. Heat salad oil in wok or electric skillet until medium hot.

In a bowl, combine cornstarch, sugar, soy sauce and apple juice or water until smooth. Add beef and toss to coat; set aside. In a large skillet, stir-fry broccoli, carrots, pea pods and onion in 1 Tbsp. oil for 1 minute.
