finished Japanese Style Grilled OystersThis is a quick and easy way to make grilled oysters at home. This is a version that we eat in Japan. It's pretty simple but has some fantastic flavours. We even make this in the toaster oven with no adjustments to this recipe. Enjoy!

*If you don't have Mirin, you can substitute it by adding 1 or 2 tablespoons of sugar to 1/2 cup of white wine or sherry.

Total Time: 30 minutes

Ingredients:

  • 6 oysters in shell
  • 3 Tbsp Mirin
  • 3 Tbsp white miso
  • 3 Tbsp mayonnaise

Steps:

  1. Preheat oven to 400 F. Wash the oyster shells in cool water with a brush. Hold an oyster with a towel, flat side up. Insert your knife between shells to separate it. Use a twisting motion as you go along.

  3. Make sure to cut the muscle which is holding the shells closed. When you cut the muscle, the top shell can be removed very easily.

  5. Heat up the Mirin and miso in a small pan over medium to low heat. Pour into a bowl.

  7. Stir in the mayonnaise and mix well.

  9. Drizzle the sauce over the oyster meat in the shells and loosely cover with foil. Place in preheated oven and bake for 10 minutes, remove the foil, and bake 5 minutes longer. Serve immediately with lemon wedges.

Butter a casserole dish. Crumble enough crackers to cover the bottom of the dish, about 1/4 inch deep. Add 1 can drained oysters. Cover with another layer of cracker crumbs. Dot generously with butter.

Parboil oysters in water. Combine chili sauce, ketchup and horseradish and heat over low heat. Place each warm parboiled oyster on half shell.

Sprinkle half the cracker crumbs over bottom of 8 inch casserole. Spread corn over crackers. Arrange oysters over corn.

Combine soup, milk and cheese in bowl. Spoon over oysters. Cut butter into flour in bowl until crumbly.

Cut cauliflower into small florets about 1-1/2 inches wide. Heat a wok or large skillet over a moderate heat. Add the oil and then add the garlic and ginger. Stir-fry for about 20 seconds to flavour the oil.

Melt butter in top of a double boiler. Add the oysters and bring to the boiling point, but do not permit them to boil. Add milk and cream. Continue heating. When the oysters come to the surface the soup is done.

How do I make stew from frozen oysters with no liquid? Pictured below are the oysters in one of my bowls thawing out.

I wonder what you mean by no liquid - do you not even want to add water to it?

If not, try this recipe that says
1 lb oysters
6 cups milk
4 tablespoons butter

YOu should of cours thaw the oysters in the fridge for a good 24 hours before cooking, and in a container that catches all the melting fluid, which then will go into your stew to add flavour.

In buttered casserole, crumble 1 strip crackers. Add 1/2 oysters and juice and 1/2 butter. Add second strip crackers and remaining oysters and juice. Pour 1/2 stick melted butter over top.
