It's been a longtime pattern in our house that we end up having a quarter of a bag of each kind of cereal sitting in the cupboards. Perhaps we get bored of them after a while, I'm not quite sure. I've found a great way to get more use out of them when they're being ignored is to turn them into cookies. Here, I've used the last of my raisin bran and crispy rice cereals to make peanut butter cookies. They are light, flakey, and hard to resist!

1 cup peanut butter (smooth or crunchy your choice)
1 cup sugar
1 egg
Preheat oven to 350 degrees F. Mix all ingredients and place by spoonfuls on baking sheet. Bake approximately 10 to 12 minutes. Let cool on rake.
