I can't believe how fast it is to make good homemade tomato sauce. The secret is pureeing the tomatoes with skins on, first! Great and easy way to use all your garden tomato abundance. Check this out!

Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients:
12 cups tomatoes, any type - cherry, plum, beefsteak
2 Tbsp olive oil
1 onion
3 sweet peppers
to taste Italian spices of your choice (I used fresh basil, oregano, & rosemary)
3 cloves garlic (I used jarred)

2 Tbsp brown sugar
2 Tbsp salt
1/4 cup cornstarch or your favorite flour
Steps:
Core tomatoes and slice into quarters.
Add to blender or food processor and puree.
Add to a pot and turn on low/medium.

Core and quarter your onion and peppers. Puree them.
Add the pureed onion and pepper into a oiled pan and cook a few minutes until soft and transparent a bit.
Add to your pot of pureed tomato. Continue cooking on medium.
Cut up fresh or just add your choice of seasonings to the pot.

Within thirty minutes my sauce tasted good! Some folks like to add some brown sugar and salt to enhance the flavor. Some add a bit of flour to thicken. There is a split pea flour that I have added to the recipe (only 1/4 cup) but just experiment. It worked and tasted great!
I left mine cook longer because I am used to having a slow cooked sauce and like that flavor. I made my spaghetti noodles and we had a lovely meal!
I ended up using some of the final product as a pizza sauce the next day, too!

This is a great mild red sauce that the kids can help make. This year I made a double batch using fresh tomatoes from the garden, rather than the canned tomatoes, and processed it in pint jars using the hot water bath canning method.
If you garden, or can get tomatoes cheaply, this is a way to use them and enjoy them when winter comes. I froze my tomatoes to make them easier to skin.

If you use fresh tomatoes, plunge them in boiling water and then in ice water to skin them.

Saute' garlic and onion in oil; add celery, green pepper, tomatoes, sugar, salt and water. Tie bay leaf, peppercorns and cloves in cheesecloth bag; then add. Cook slowly, uncovered, 20 minutes.
