I have done this before for many years. The one thing I would recommend is to cut the liquid/water some because using the banana frozen adds just a touch more liquid. I love using frozen bananas. I have even used them in pancakes, anything that uses bananas can be use frozen bananas.

Whenever you see overripe bananas in a store, buy as many as you can. Have your friends save them if they don't use them.
When your bananas start to get too ripe, remove the peeling and put into a freezer or sandwich bag and freeze it.
When bananas are being sold at a reduced price because they are over ripe, have blackened skins, buy them.
I make a habit of buying overripe bananas whenever I find them at a significant savings. Don't let the dark skins fool you!
