There are a lot of quick and easy recipes for Spanish Rice, but last night I was in a hurry, and had to improvise quite a bit. This is what I came up with.
All the flavors mix together and just work. Cook bacon until done. Remove and drain. Saute onion, peppers, and garlic.
Brown ground beef in shortening. Add onion, green pepper, brown sugar, and seasoning. Cook 8-10 minutes. Add tomatoes, ketchup and rice.
Brown ground beef and drain. Add the next 6 ingredients. Cook 9 to 10 minutes. Add tomatoes, ketchup, and rice. Cover and let simmer until rice is done.
Simmer until the vegetables are nice and tender and add 2-3 cups COLD cooked rice and heat to simmer stage. Hot rice just goes to mush and just isn't very nice.
I have a recipe I came up with myself. I love Spanish rice but can't ever seem to make it like restaurants do. So here's what I do.
In a large skillet, heat the oil over medium heat. Add the beef, onion, and green pepper, cooking until the meat is browned; drain liquid.
Fry bacon and onion together until slightly brown. Add tomatoes, brown sugar. Heat thoroughly, and pour over the hot cooked rice. Mix well and add salt to taste.
