My husband is diabetic too, and we're all trying to cut back on the sugar anyway. I'm always surprised at how many people don't realize that honey IS sugar. I have made a Maple flavoured 'sauce" using splenda brown sugar Blend in some water, bring to a boil and thicken slighlty with cornstarch, then add a few tablespoons of margarine, a pinch of salt, and Mapline flavouring. My personal preference is sugar free jams on my pancakes, or even a little Splenda mixed with cinnamon or pumpkin or apple pie spice mixes. I never was a big syrup fan.

I haven't tried this. It's been a long time since I made syrup or needed it, but zylitol measures & tastes just like sugar, even has the same consistency. Zylitol doesn't raise blood sugar like sugar, either. You might try a little molasses. It's good for you & adds a rich taste to things.

That should kill the old fart!
However, if you don't want to hasten his demise, leave out the corn starch and the splenda. Try diabetic pancakes made with eggs and bananas, (NO flour!) and top them with frozen leftover berries. Whenever I pick berries I put any leftover ones into cupcake cup size Glad containers.

Even the containers for cupcake papers work well. If a container isn't full enough, I chop some rhubarb or banana or apple into it. ANY fruit is better than starched splenda soup.

LOL, Helmut! He's pretty much right though. Splenda will actually raise your blood sugar more than sugar. It is not a safe alternative to sugar. Here's the science on that: www.webmd.com/.../artificial-sweeteners-blood-sugar

If you are a diabetic, CHANGE your diet. One thing you should definitely not be eating is pancakes, since they are nearly all carbohydrates. Instead, try scrambled eggs with turkey bacon and whole wheat toast. Also, Scottish or Irish oatmeal with walnuts and just a couple of spoonfuls of brown sugar.
