Coconut CookiesQuick and oh, so easy and definitely good. This is a last minute recipe cause only takes about fifteen minutes.

Ingredients:

Preheat oven to 350 degrees F. Mix nuts, coconut, and white chocolate chips into the dough. Drop by spoonfuls onto a baking sheet and bake 9 to 10 minutes or until firm.

Source: Found the idea via Rachael Ray, but no specific measuring amounts were given for the recipe so this is what I came up with ;-)

Cream butter and sugar. Add eggs one at a time. Add flavorings and spices. Add flour and oats. Add remaining ingredients. Drop small mounds onto greased pan.

Good cookies! Cream shortening; add sugar gradually. Add vanilla, add eggs, beating well after each egg.

If you like coconut, these are really good. We'd found some cookies while on vacation in the South, that we liked. This recipe is as close as we've come in likeness to those.

Here's a recipe you can add what you want to it.

Original Recipe Yield 5 dozen
Ingredients
3/4 cup margarine, melted 1 cup white sugar 1 egg 1/4 cup molasses 2 cups all-purpose flour 2 teaspoons baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground ginger 1/2 cup white sugar

Directions
In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.

Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks. Good luck.

Cook to rolling boil, remove from stove and add remaining ingredients. Drop on wax paper. Do not bake.

Combine flour, coconut and baking soda. In a bowl, cream together butter, sugar, egg, orange juice and rind; stir in flour mixture and blend well.
