I opt to use Panko bread crumbs because Panko makes the coating crispier than corn flakes or bread crumbs (you will find it in the Asian isle of your grocery store). I have also used garbanzo/chickpea flour in place of all purpose flour and it adds a nice very slight nutty flavor. The amount of ingredients listed here makes the exact amount as one Shake n Bake packet; enough to coat 6 to 8 pieces of bone in chicken. I know it's called Shake n "Bake" but more often than not, I fry with it rather than bake.

If baking, preheat oven to 400 degrees; if frying, begin heating oil in a large skillet.

Bake in an ungreased baking dish until cooked through, about 35 to 45 minutes.

Make your own meat coating mix, or Shake 'n Bake, to control flavors and sodium.
Preparation:

Shake and Bake Chicken
Preheat oven to 350 degrees.
Place 1 cup Homemade Shake and Bake Coating Mix in a shallow bowl. Rinse chicken or fish; pat dry. Dip chicken or fish into beaten egg, buttermilk, milk, or salad dressing to coat, then dip into Homemade Shake and Bake Coating Mix. Place on baking sheet and bake at 350 degrees. Bake 20-30 minutes for boneless chicken or fish strips. Bake one hour for bone-in chicken pieces, until meat thermometer reads 160 degrees.

This may sound crazy but I have heard people use crushed Corn Flakes. You can either dip the pork in egg and then into the Corn Flakes to help it stick, or try it without.
There are some good recipes in the Thrifty Fun index. Here is mine:
1 1/4 cup flour
1 3/4 cup bread, cornflake, or cracker crumbs
2 tablespoons brown sugar, do not pack
2 tablespoons herbs of choice (I like a nice mix of herbs. Paprika, garlic and onion powder is about closest to shake and bake. but you can do italian herbs, too)
Mix thoroughly in zip lock bag or canister.
How to use to make 8 nice chops
oven at 425 degrees
Shake your basic mix up real well. Measure 1 cup into a bag. Rinse the chops off, and shake them off until they are just damp. Put in bag of crumbs just like you would with shake and bake. Put on a well greased baking sheet and bake until done, 40 or 50 minutes.
