Homemade Shake n BakeSomeone was just asking for a Shake n Bake coating mix substitute. Here's one I came up with a few years ago that tastes very, very close to Kraft's Original Shake n Bake recipe. Haven't made it in so long that I almost forgot I even had it, guess what I'll be making tonight for old times sake. ;-)

I opt to use Panko bread crumbs because Panko makes the coating crispier than corn flakes or bread crumbs (you will find it in the Asian isle of your grocery store). I have also used garbanzo/chickpea flour in place of all purpose flour and it adds a nice very slight nutty flavor. The amount of ingredients listed here makes the exact amount as one Shake n Bake packet; enough to coat 6 to 8 pieces of bone in chicken. I know it's called Shake n "Bake" but more often than not, I fry with it rather than bake.

Ingredients:

  • 9 Tbsp. Panko crumbs, slightly crushed
  • 2 tsp. all purpose flour
  • 1 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. sugar
  • 1/4 tsp. garlic powder, or more to taste
  • 1/4 tsp. onion powder, or more to taste

Directions:

Combine ingredients well in a small bowl and transfer to a large plastic storage bag.

If baking, preheat oven to 400 degrees; if frying, begin heating oil in a large skillet.

Place two pieces of very slightly moistened chicken in bag, shake until well coated, repeat until all pieces are coated and discard any remaining mixture including the bag. If planning to fry allow coating to set for ten minutes before cooking.

Bake in an ungreased baking dish until cooked through, about 35 to 45 minutes.

Fry until cooked through, about 10 to 12 minutes each side.

I make my own shake and bake base. It's easy. In a large jar, I add all my leftover bits of broken chips, pretzels, bread crumbs and cereal crumbs when the cereal container is empty. Each time I add to my crumb jar, I give it a shake so all the crumbs are mixed. Right before I use it, I take some out, put it into a ziplock bag, and use the rolling pin on it to make the crumbs smaller if needed. When I need a coating for chicken, pork chops or to add to meatloaf, I use from this jar.

Put corn flakes in a food processor and blend until fine. Add parsley flakes, garlic powder, and grated Parmesan cheese. Dip chicken breasts in beaten egg and roll into the corn flake mix.
