Preheat oven to 400 degrees F.
Spread cranberry sauce on one of the tortillas, evenly sprinkle with half of the cheese, evenly sprinkle with turkey and then evenly sprinkle with remaining cheese.
Top with the other tortilla, place on a baking sheet and bake until cheese is melted, about 7 to 9 minutes.
Slice into four to six wedges and serve.

My family loves to eat cheese or chicken quesadillas at our local restaurant, but they're pretty expensive for what you get. They seem like they'd be pretty easy to make, but I'm not sure how to get started or what kind of cheese(s) to use. Do I really have to buy a special machine to make these at home? I'd appreciate any hints, tips or recipes that you have to offer. Thanks in advance!
Quesadillas are SOOOO easy to make. buy reg. flour tortillas, big or small & heat a pan to medium. Butter one side of a tortilla and place in pab butter side down. Next put a layer of cheese,( any kind will do, my family likes american or cheddar) add grilled chicken if desired, then place another tortilla on top and butter it. Flip it when the bottom is light golden/cheese is melted. Add lettuce, tom., sour cream, whatever you like on the side! You do not need a special machine!!!
These are easy - and you don't need the butter on the tortillas if you don't want the extra fat. I made them last night with shredded cheddar and chopped up spring onion inside, and the salsa and sour cream on the side. I just put the base in the warm pan, added the filling and the top one, flipped it and cut it with a pizza cutter. Delicious!
Cheddar, jack or combination of these is good for quesadillas. Use flour tortillas. Do not butter them. Tortilla on pan or, if making more than 1 use a pancake griddle if you have one. Sprinkle on cheese, onions or chicken are optional. Melt, add 2nd tortilla and flip, Grill for a moment to crisp.
You can make quesadillas with just about any kind of filling - I cut up chicken breast and saute it in a little oil, then add taco seasoning mix, with a little water to hold it together. I sometimes add onions and green peppers. I also have some Southwestern Seasoning mixes in jars that I have used. Once cooked, lay flour tortilla on a cookie sheet, cover with cheese, usually Monterey Jack or Cheddar or even the taco blend of shredded cheese, on the bottom tortilla, a layer of chicken mixture, then another layer of cheese.
We LOVE quesadillas, and went to Fleet Farm and bought a quesadilla maker for around $17 on sale from $25. You can use just about any kind of food you like. It's great!

I make quesadillas all the time. I use the shredded monterey jack cheese, but really you could use any cheese that is shredded. It's really a lot easier, and a lot less messy if you chop the fillings up very fine. You do not have to have a "special machine", however, I did invest in one for only $19.99, and it really was the best small investment I've made. They do not even need to be cleaned, just wipe clean with a dry or damp paper towel. And they come with recipe books to make all different kinds of quesadillas. Good Luck!!!

Yes, they are easy to make even without a special machine. I don't own one. What I do is grill chicken, red peppers (or any color you like), and onions, and put all that on a tortilla. Then put shredded Monterey Jack cheese on top of that and top it with a second tortilla. Put the quesadilla on a cookie sheet, and broil it. Take it out after about 3 minutes, or until the cheese is melted. Cut it with a pizza cutter and enjoy!
This is best if you have a quesadilla maker appliance. These are good for a snack or even dessert.
