Total Time: 45 - 60 minutes

Yield: 8-10 slices

Ingredients:

  • 3 cups self-rising flour
  • 2 tsp white sugar
  • 1 tsp kosher salt
  • 2 tsp honey
  • 1 tsp caraway seeds
  • 1 bottle or can dark beer (12 oz)

Steps:

  1. Preheat oven to 375 degrees F. Spray standard loaf pan with cooking spray.
  2. Sift flour, sugar, and salt together.
  3. Add honey and caraway seeds. Slowly fold in beer with spatula or spoon.
  4. Dough should be thick but not as dense as biscuit dough.
  5. Turn dough into loaf pan, leveling gently with back of spatula.
  6. Bake 45 minutes, remove from oven and brush on melted butter and bake an additional 5 minutes. This step is optional but it does give the top a nice, golden touch.
  7. Allow to cool 10 minutes. Serve warm for best results.

We had some outstanding beer batter bread from the Czech Stop ('Check Stop') restaurant in West Texas. Anyone have a similar recipe?

Simple Beer Bread

Ingredients:
12 oz beer (not light or corona)

3 C. self rising flour

1/3 C. sugar

3 Tbsp. butter, melted.

Instructions:
1. Preheat oven to 350. Spray a 9x5 loaf pan with cooking spray.

2. Combine flour and sugar; stir in beer (you might have to use your hands to get it mixed thoroughly). Dough will be sticky.

3. Pour into prepared loaf pan; brush top with melted butter.

4. Bake for 50-60 minutes or until top is golden brown. Cool slightly; remove from pan and finish cooling.

The beer batter also makes good dinner rolls. Divide the batter among 18 greased muffin tins and bake at 350, 15 - 20 minutes.

Breads, Warm and cold alike
Beer yeast

Take 4 large potatoes, 1 double handful of hops, put in a sack and boil with the potatoes; dip the potatoes out of the water when done into a gallon crock and mash them fine, then pour the water over gradually; mix well, then fill the crock with cold water and stir in 1/2 cup of salt, 1 cup of sugar, 1 pint of good yeast; then set in a warm place to ferment. Eight hours will suffice, and then tie up and keep in a cool place.

Hope this helps, the recipe is from a 1908 book, Maryjo
