Cake with whipped cream topping.This cake is so delicious and incredibly easy to make. The best part about it is the butterscotch drizzling sauce is made at the same time, right under the cake in the same pan. All in one goodness!

Total Time: 50 minutes

Yield: 6-8 Servings

Ingredients:

  • 1 cup flour
  • 1 Tbsp baking powder
  • 1/2 cup fine sugar (Caster sugar)
  • 1 beaten egg
  • 1 mashed banana
  • 1 cup milk
  • 1 tsp vanilla extract
  • 6 Tbsp melted butter
  • 1/2 cup light brown sugar
  • 2 Tbsp golden syrup or corn syrup
  • 2/3 cup boiling water
  • whipped cream or ice cream to Serve

Steps:

  1. Preheat oven 350°F.
  2. Sift the flour and baking powder in a large bowl. Add sugar.
  3. Mix together the beaten egg, the mashed banana, milk, vanilla extract, and melted butter.
  4. Pour mixture into dry ingredients and stir to mix until combined.
  5. Pour this wet dough into a 9-inch pie dish or large Pyrex baking dish then place on a baking sheet.
  6. To make the butterscotch sauce, put the brown sugar, golden/corn syrup and boiling water in a saucepan. Bring to a boil, then drizzle it all over the dough, right over the whole thing, in a zig-zag manner from one end to the other.
  7. Bake in preheated oven for 30-40 minutes, or until it feels slightly firm in the center.

  9. When you cut into it, you will see the butterscotch sauce has formed on the bottom of the cake. Use a spoon to drizzle on top of cake while serving. Serve with whipped cream or vanilla ice cream. Yum!

This is the best banana cake I've ever tried, and I've tried a few. The frosting is my absolute favorite, with an incredible, creamy texture and a wonderful flavor.

Sift dry ingredients into mixing bowl. Make a well in the dry ingredients and add oil, egg yolks, water, bananas and lemon extract in order given.combine egg whites and cream of tartar in large mixing bowl.

Cream the sugar and shortening until fluffy. Beat in the vanilla, eggs and bananas. Sift the dry ingredients, combine with the cherries, and add alternately with the milk, beating well after each addition.

Recipe for Nana's Banana Cake. Cream sugar and Crisco. Add eggs and cake flour, beating until smooth. Add all other ingredients and mix well.

Recipe for Coconut Banana Cake. Cream butter, sugar and salt together. Add beaten eggs, vanilla, buttermilk and mashed bananas. Stir just until well mixed, then add dry ingredients.
