Balsamic Vinaigrette Salad DressingUsing roasted garlic tempers the raw garlic flavor because of its sweetness.

Ingredients:

  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. white or red balsamic vinegar

  • 1/2 tsp. crushed roasted garlic, or more to taste
  • salt and pepper, to taste

Directions:

Whisk the oil, vinegar, and garlic together in a small bowl adding more garlic to taste if desired. Whisk in salt and pepper to taste and serve.

1/4 cup balsamic vinegar
1/2 cup olive oil
2 garlic cloves, sliced thinly

Instructions
Whisk together vinegar, olive oil and garlic.
Let stand 30 minutes before using.
Remove garlic before using.

A simple vinaigrette that is equally at home on mixed greens, grilled veggies, chicken, and pasta salads -- or even as a marinade.
Ingredients

5 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
12 teaspoon salt
14 teaspoon freshly ground black pepper
1 clove garlic, smashed
5 tablespoons extra-virgin olive oil
5 tablespoons olive oil

Instructions

Makes about 1 cup

In a nonreactive mixing bowl, whisk together vinegar, mustard, sugar, salt, pepper, and garlic. While whisking, add oils in a thin, steady stream until completely incorporated and dressing is emulsified. Use immediately, or refrigerate in a covered nonreactive container, up to 1 week.

Cook's Note: This vinaigrette is best if allowed to sit for at least 10 minutes to allow the garlic to infuse. Discard the garlic before serving.

What the different between balsamic vinaigrette and balsamic vinegar? And why do we have to add olive oil into the balsamic to make vinaigrette, why not just use the balsamic? Thanks.

Here is the difference - Balsamic Vinaigrette - involves oil, sugar and seasonings to dark grape vinegar. Balsamic Vinegar - no fat ,or sugar, fewer calories, has more antioxidants.

It is more of a dark grape vinegar much lighter and thinner.

The big difference is that Balsamic Vinegar is supposed to be healthier because Balsamic Vinaigrette contains oil and sugar and is considered less healthy. Vinaigrette also contains mustard and optional spices.

Any pre-made vinaigrette sold in stores will always add a lot of ingredients that are no so healthy for you. They put in a lot of sugar and other ingredients so it can stay on the shelf longer. If you want to make this on your own it is very simple.

Follow your favorite vinaigrette recipe that you use all the time, but instead of using regular vinegar replace it with balsamic vinegar. That is what I do at home and it is delicious.

I use balsamic vinegar as a salad dressing all the time, with nothing added. I find that the slightly sweet flavor doesn't need anything at all.

Vinaigrettes are always an emulsion of oil and vinegar or another acid like lemon juice. It's a very common salad dressing and many people like the oil/vinegar mixture. It's just a question of preference.
