I thought I'd share this delicious dessert that I used to make when my kids were home on snow days. It soothed the senses twice by filling the house with the smell of warm baking apples that we would enjoy after shoveling snow or sleigh riding.

Ingredients:
2 medium granny smith apples
1 8 ct. package refrigerated crescent roll dough
1 tsp cinnamon
1/2 cup butter (or margarine)
1 cup orange juice
1 tsp vanilla extract
1/2 cup finely chopped pecans
Steps:
Preheat oven to 350 degrees F. Grease a square baking pan. Peel and core apples, cut into fourths. Open and separate dough.
Wrap each apple section in a crescent roll. I stretch them a little to cover the apple but some apple can stick out.
Put in the pan, sprinkle on cinnamon

Make sauce: In a sauce pan add butter, sugar and OJ. Heat to a boil.
Remove from heat and add vanilla.
Pour over dumplings, sprinkle pecans on top.
Bake 30 minutes or until crust is golden and beginning to bubble and apples are tender when pierced with a fork.
Spoon syrup over apples and serve, with or without ice cream.

For Pastry: Mix half of the shortening with dry ingredients. Then mix in other half and add ice water. Blend with fork until dough can be pressed together.

Divide into 6 equal portions and roll out each separately.
