Seriously crisp top. The tricks to a firm but moist bottom layer, and a dry, crispy top are to cut the apples in eighths, and use very cold bits of butter on top. Don't mix any of it once in the pan.
When you are feeding a small family and don't want a lot of leftover dessert, this is a fun idea to make individual servings.

Does anyone have a recipe for apple crisp that does not have rolled oats in it? I used to have a recipe that used flour, not oats. A diabetic recipe would also be wonderful, but not necessary.
