Mix shortening, sugar, and brown sugar. Mix egg and vanilla. Mix flour, salt, and baking soda. Combine all 3 mixtures and add chocolate chips. Drop by teaspoonfuls on ungreased cookie sheet.

These cookies are so good it's hard to find words to describe them! They're not too gooey, not to crisp, not too sweet... just right. My mother tweaked the recipe from a Martha Stewart magazine, adding a tablespoon of vanilla and playing with the measurements until it was both practical and perfect! I like to save making them for a cold winter day, and to eat a couple while they're still warm from the oven. But they taste great any time!

Cream butter, brown sugar, and sugar together. Add 2 eggs and vanilla. In separate bowl, mix dry ingredients and then add to wet mixture.
Mix shortening, sugar, soda, salt, and vanilla until light and fluffy. Add eggs, beat well. Add flour. Stir in chocolate chips. Bake at 350 degrees F for 8-12 minutes.
Cream butter, oil and sugars well; then add rest of the ingredients. Drop by teaspoonsful on greased cookie sheets. Bake at 350 degrees F for 12-15 minutes.

Preheat over to 375 degrees F. Cream together sugars, butter and vanilla. Add eggs, mix well. Add peanut butter, if used. Add dry ingredients, including optional ingredients and water, mix well, then add oatmeal.
