When making bread machine bread, I make one recipe for the machine, and another one for the zip bag. I omit any liquid or fat from the bag, and write the measurements for the water, oil, etc, and temperature/baking time on the label. You could make up as many of these homemade bread mixes as you wanted. I store mine in the refrigerator.
I have just been given a Sunbeam bread maker. When making my first loaf today the dough wrapped around the paddle and when it finished baking I couldn't get the loaf out without destroying it. How is this prevented? The paddles do not seem to be removable.
You can grease the pan, especially around the paddle.

There seems to be a lot of controversy about how to keep this from happening as it seems to be presenting a problem for lots of bread bakers.
If you do research you will find the majority of users remove the paddles before the bread is finished (thereby eliminating this problem and also eliminating the large hole in the bread).
I think you may have to do several in different ways and decide which works best for you.
If you do not have a manual for your bread maker you can probably find a free one on the web with your brand and model number.

What you are describing is why most of my friends stopped using their machines for the full bake and use it only to do the knead and rise process, removing the dough before it started to bake in the device and baking in the oven.
Does the basket you bake in come out? If so, you can try to carefully remove the pan after the machine bakes the bread, cover the top with a towel (rubber band it to the pan), turn the pan upside down on another towel or plate and often as it cools, it will pop out on its own. Kind of luck if you ever baked a bundt cake.
You will still have the paddle holes on the bottom, but it usually does not destroy the bread, although with softer, crumbly breads sometimes it does (which goes back to why most people I know only use the machine for the working part and bake in the oven).
The newer machines have collapsible paddles which still leaves holes, but not the paddle marks.

They have different settings for different types of bread, and so you can choose the crust. You will have more success by following the manual.

I have reduced the sugar down from 3 tbsps to 2 teaspoons as the bread was so sweet. Now it only rises to half the height and is a pretty solid, but is more edible.
I've also changed to half and half brown and white bread flour. How much sugar do I need to get a good rise without being too sweet?Bread flour has more gluten, and that makes the bread rise more. Since you substituted flours, buy some vital gluten and add to the recipe. The box will tell you how much to add.
This is a nice basic, not too sweet recipe that I like. You have to wrap it well or it gets stale fast. It usually gets eaten in a day, but if there is any left, wrap well! Yum!!

I would try making up the batter by hand and then put it in the machine to rise and bake.
I use mine to mix the bread but take it out to rise and bake as my machine does not cook it as well as the oven does.
Do I have to set the timer for the bread to complete the cycle? I have the Welbilt AB 100-4 machine. I set the bread setting and clicked on start. It kneaded and is rising. Will it heat up on its own or was I supposed to set the timer?

The shaft on my Hitachi bread machine will not go back and forth. The blade comes out, so that is not stuck. I had to knead the bread by hand. I boiled the bread pan in water for about 15 minutes with water around the pan and inside the pan. How can I get this to work? Last time I used it it was fine.

Can you take three or four pictures of the mixing/baking pan inside and underneath. That might give one of we viewers an idea of how to fix.
Will my bread machine continue with its regular cycle after a power surge? My bread machine was in the "rising" mode when we had a power surge. I don't have a manual because it was purchased at a yard sale. Can you tell me if the machine will continue with the cycle or do I need to just throw out the dough?

I don't think it will be a problem. Just continue the programme and see what happens.
I make my bread by hand now. 18 ounces of flour, mixed with 2 teaspoons of salt, 1 and a quarter teaspoons of salt, rub in 1 ounce of butter, stir in 1 and a half teaspoons of dried yeast, 10 fluid ounces of warm water, knead for about 10 minutes, leave in tin for about an hour, only one rise required. Cook in hot oven for about half an hour.
