Packing Salad for Lunch

January 18, 2008

Woman Having Salad for LunchI like to make my own salad dressings to take to work with me to use on my salads to cut back on calories. My dilemma always comes in what to put it in that is easy and portable. In order to recycle, I rinse out an empty plastic disposable water bottle, use a funnel to put my dressing in the bottle and the put the lid on it and take it to work with me. Not only are you helping the environment by reusing those plastic bottles, but the bottle is good to reshake and stir your dressings in as well.

A great way to take a salad to work for lunch is to put all of the ingredients in a reusable glass jar. This page contains mason jar salad ideas.

Dose Of Dressing. Don't throw away your empty prescription bottles. I use mine for a premeasured "dose" of salad dressing for my work lunches. . .

I am looking for receipes for cold salads, such as pasta, egg salad, and such.

My husband travels for his work and he takes a cooler and I am running out of ideas for cold salads for him to take along.

Any resources would be greatly appreciated.

Thanks,
Melissa

This is one of my favourite cold salads and super simple to mix up.

Japanese Cabbage Salad

1/2 c. sliced or slivered almonds
2 tbsp. sesame seeds

1/2 a med. head of cabbage (shredded)
12 oz. fresh bean sprouts
2 c. fresh mushrooms
2 green onions chopped
1/4c. sunflower seeds

1 pkg instant noodles (any flavour)

Dressing:
the instant noodle seasoning
1/2c. cooking oil
2-4tbsp. soy sauce
3 tbsp vinegar
1 tbsp sugar
1 tsp salt
1/2 tsp pepper

*everything can be mixed ahead of time, but save the noodles until you are ready to eat as they can become soggy.

The great thing about this recipe is that you can always change the ingredients some (eg: leave out the muchrooms or add cooked cubed chicken breast).

Hope you enjoy!

Chicken curry salad
cubed chicken or turkey
diced red onion
diced celery
golden raisins
mayo
curry powder

Mix up to taste, or amount.
We use this as a wrap filling, lay out the wrap, use lettuce, spinach, and shredded carrots, put the "spread " on the lettuce or spinach, sprinkle the carrots on and roll. Can use lettuce for the wrapper.
