Applesauce CakeThe cake and the frosting are very easy to make. It's fairly quick since you use Duncan Hines box cake, and we add a few of our own touches to it which our family loves. It's a good cake which is adaptable to almost any family get together or for big holiday meals.

Ingredients:

Spicy Walnut Penuche Frosting

Directions:

Preheat oven to 375 degrees F. Grease and flour 3-8 inch cake pans.

Combine cake mix, eggs, applesauce, melted butter, and cinnamon in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 4 minutes. Stir in walnuts. Pour into pans.

Bake at 375 degrees F for 20-22 minutes or until toothpick inserted in center comes out clean. Cool in pan 12 minutes.

Invert layers onto wire racks. Allow to cool slightly, then "paint" two layers with melted apple jelly. Allow to cool completely.

Place one layer with apple jelly on plate, jelly side up. Add another coat of melted apple jelly. Place 2nd layer on top, jelly side up, and add another coat of melted apple jelly. Place 3rd cake layer on top and frost the entire cake with the Spicy Walnut Penuche Frosting.

Frosting Directions:

Melt butter in medium saucepan; add brown sugar, and apple pie spice.

Cook over low heat until sugar is completely melted. Stir constantly. It has a wonderful yummy aroma. Slowly add heavy cream or half and half and bring just to the boiling point while stirring constantly. Do not boil.

Remove from heat and allow to cool enough to add the confectioner's sugar without it melting. Gradually add confectioners sugar, then add vanilla. Add 1 3/4 cups of the finely chopped walnuts to frosting. Beat until thick enough to spread. If frosting becomes too stiff, add a little melted apple jelly. (maybe just a tablespoonful at the time)

This recipe makes enough frosting to lavishly frost sides and top of a 3 layer cake. Make pretty swirls on top of cake and sprinkle with 1/4 cup of finely chopped walnuts.

Source: Another one of my Mother's specialties. Duncan Hines was the only boxed cake mix she would use for years. It took her a long time to cook with anything that came "in a box". The recipe probably came from one of the Duncan Hines boxes. This cake and her Pineapple Up-side-Down Cake were family favorites. She had 2 tall glass cake stands with the glass covers. They sat on either end of the large kitchen table and both always had nice cakes in them.

She did a lot of babysitting, and when the parents came to drop off or pick up their children, the first thing they'd do was get a cup of coffee and a slice of cake. Everyone called her Granny. She "belonged" to many people.

Blend dry ingredients into applesauce mixture. Pour into six well greased pint jars, filling 2/3 full. Bake at 325 degrees for 45 minutes. Remove jars from oven. Put lid on jar and seal tight. Jars will seal as cake cools. Use wide mouth jars. Slice and serve with cool Whip.

I'm trying to find a recipe for applesauce cake that I remember from childhood. It was always baked for Christmas (not a fruit cake). It was extremely moist with raisins, walnuts, and maraschino cherries. The cake was really dark and was baked in a tube pan. No one in my family can find the recipe. Would any one out there have this cake recipe, please, and be willing to share it with us? I'd love to bake it for Christmas, ahh the memories :-)

Holiday Applesauce Cake

1 C. Crisco Solid Shortening
2 C. White Sugar
2 Eggs
2 C. Applesauce
2 tsp. Baking Soda
1 tsp. Salt (I use less)
3 C. Flour

1 tsp. Cinnamon
1/4 tsp each: Cloves, Allspice, Ginger, Nutmeg
1 Box Seedless Raisins
1 C. Chopped Walnuts
1 C. Chopped Maraschino Cherries

Toss Raisins with a half cup of the flour; set aside.
Add Baking Soda to Applesauce; set aside
Mix dry ingredients together; set aside
Cream Crisco, Sugar, and Eggs.
Add dry ingredients and applesauce alternately to Crisco/Sugar/Egg mixture.
Fold in Raisins, Nuts, and Cherries
Bake in a greased tube pan, 325 degrees, 1 1/2 to 1 3/4 hours.
Cool in Pan.
Unmold and enjoy!

My grandmother used to make a cake she called gold and silver applesauce layer cake. It was delicious. I know she gave the recipe to some of the ladies in the church, but I do not have access to their names here in charleston. Does anyone have a recipe that has applesauce between the layers and the layers are gold and silver?

1 cup applesauce
2 cups white sugar
3 eggs, separated
4 cups sifted all-purpose flour
4 teaspoons baking powder
1 1/3 cups milk
2 teaspoons vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Cream applesauce and 1 cup sugar; add egg yolks, mixing well. Combine 2 cups flour and 2 teaspoons baking powder. Add flour mixture alternately with 2/3 cup milk to creamed mixture. Pour into two greased and floured 9 inch round pans.
Bake for 20 to 25 minutes, until done. Cool.
Cream 1 cup sugar and 1/2 cup butter. Combine 2 cups flour and 2 teaspoons baking powder; add to creamed mixture alternately with 2/3 cup milk. Beat egg whites, and fold into batter. Stir in flavoring. Pour into two greased and floured 9 inch round pans.
Bake for 20 to 25 minutes. Cool.
Spread your choice of frosting between layers, alternating yellow and white layers. Frost outside of cake.

Grease 2 pans (8x4 inches) or 1 9 inch tube pan. Line with foil or brown paper and grease again. Combine applesauce, shortening, sugar in saucepan. Bring to a boil and cook for 5 minutes, stirring now and again.

Mix all together. Bake in non-stick spray coated 8x10 inch pan at 350 degrees F for 30-40 minutes.
