This is the recipe for my mum's walnut meringues. I especially love how there is so little that goes in them, but they taste like a lot of work. I hope you give these a shot!

Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes
Yield: 20-24 meringues
Ingredients:
4 large egg whites
pinch of salt
1/4 tsp fresh lemon juice
1 cup granulated sugar
14 ounces walnuts, roughly chopped
Steps:
Preheat oven to 220 F. Beat egg whites until stiff peaks form. Add the salt and lemon juice. Continue to beat.
Add the sugar, 1/3 at a time as not to weight down the whites. Keep beating until all of it is mixed in and creamy.
Gently fold in the walnuts.

Use two tablespoons to to drop mounds of the meringue onto a baking sheet lined with parchment paper.
Bake meringues in preheated oven for 50 minutes, then drop temperature to 200 F for 10 minutes until crisp. If they're still a bit soft, let them bake a bit longer.
I love to bake, but baking can be an expensive hobby. When I'm especially strapped, I make meringues. Meringues are a cheap (and VERY low fat) delicious treat.

Recipe for Mint-Chip Meringues. Preheat oven to 300 degrees F. In large bowl with electric mixer, beat egg whites, cream of tartar, and salt until foamy.

Gradually add sugar, one tablespoon at a time, until stiff peaks form. . .

Meringues are suprisingly easy to make in this recipe. Just combine egg whites with confectioner's sugar to bake these delicious little cookies right in the microwave.
