When I was young my daddy always made the potato salad and, at least for me, no other potato salad on earth has ever even come close to being just as good as his. Maybe that's simply because I loved him so much. ;-)
I am looking for a recipe for potato salad and egg salad.
When my mother made potato salad, she boiled the potatoes whole and then peeled them. Her potato salad was so good.
Does anyone have this recipe, I can only describe it, but maybe someone will recognize. Its a deli (cold) potato salad, there is a bacon flavor, no eggs, creamy texture but not mayo. It also had finely chopped softened (cooked?) onions. I asked, of course, they were not telling! Does anyone know how I can replicate this?

In 3-4 quart saucepan, cook potatoes with onion and peppers in a large amount of boiling water, covered, 6-8 minutes or until potatoes are tender; drain well.
