A plate of sauteed kaleDoes anyone have any really good ways they use Kale from the garden? It looks like I might have an abundance. I know that you can use it in salads and soups, but I was looking for another suggestion.

I just recently discovered how to fix kale. It is impressive in the field of detox, has a load of fiber in it and fights cancer of all things. It's considered a superfood. I slice it up into ribbons or bite size pieces and steam it on the stove for ten minutes. I read that steaming makes the benefits more accessible. Then I douse it with olive oil, vinegar or lemon juice, just a smidge, some grated cheese, garlic and a smidge of salad dressing of choice maybe. Oh, yeah, I put a load of garlic in the water that it is steamed with. Eat it regularly for the best results. I just started so can't make any claims yet.

Kale chips are my new addiction! Break into chip-sized pieces coat with a little olive oil. Salt to taste and bake at 300 for 20-25 minutes until crispy; satisfies your salty crunchy cravings in a healthy way.

I saute it in olive oil, then put sesame seeds and a bit of sesame oil on top.

I really lke to use kale because of all the benefits it has. One thing I like is to use is the stems. I cut them off just below the green leaves and slice them very thin slices (they are kale, too). I cut the leaves into squares or something similar because I don't like long pieces of greens.

I use the powdered chicken or beef broth in cooking because it takes away any bitterness. I season with garlic and a little oil. The broth is salty so taste before using any more salt. Cook until desired doneness.

If you like Southern Greens you'll love using kale alone or in conjunction with assorted greens like collard, mustard or turnip. Make extra batches because cooked greens freeze really well.

I'll second the kale chip idea because my son-in-law makes them for us and they are so good. Kids really go for them, too.

When we were growing up, I remember my mom cooking kale by boiling it until it was tender, then served it with a splash of vinegar...sounds crazy but it was so good that way. The vinegar was added by each person to suit their taste.

I use kale in my smoothies because it adds a lot of vitamins. Use a combination of fruit, coconut water or orange juice and kale and its very good!

I find strawberry kale with orange juice is good.
