All purpose flour is PLAIN flour, powdered or confectioners sugar is icing sugar, baking soda is bicarbonate of soda not baking powder, canning means bottling, you get used to U.S. terms after a while although i personally prefer imperial or metric as "cups" don't seem so precise.
