This light and crispy baked potato chips recipe is easy enough for anyone, and will certainly serve to satisfy your craving for crunchy, salty potato chips without all the calories! The thinner you slice the potatoes, the better in this baked potato chips recipe.

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

1 lb. russet potatoes, cleaned and sliced into 1/8" slices
1 Tbsp olive oil
1/4 tsp salt

1. Preheat the oven to 450°F

2. In a large bowl, toss the potatoes together with the olive oil and salt. Spread the potatoes in a single layer on a large baking pan, coated with cooking spray.

2. Bake for 20-25 minutes, or until the chips are crunchy, but watch to see that the potatoes do not brown. Allow to cool completely.
