Tomato Bread AppetizerThis is my twist and take on "Pan con tomate" - a faster method by pureeing the tomatoes, but you can do the original method which is grating the tomatoes. This makes a great snack or appetizer! Any extra puree can be saved in the fridge for future use.

Pesto Chicken Potato Patties

Pesto Chicken Potato Patties on plateThis is one of my latest favourite high protein foods that I reach for when I don't feel like having bread or pasta. These chicken patties have plain mashed potatoes added to them to satiate my need for carbs. I've added a couple tablespoons of pesto to the mix to give it some depth. You can absolutely have these in a burger, but I prefer them with a big fresh salad!

Cleaning and Storing Romaine HeartsI eat a lot of salad and like to buy the big bags of romaine hearts at Costco. I find that bagged salad goes bad very quickly, but preparing it this way myself allows the lettuce to last over a week.
